Keto Avocado and Bacon Egg Cups
Keto Avocado and Bacon Egg Cups are a low-carb breakfast dish where halved avocados are wrapped in bacon and filled with eggs before baking. It's a simple and delicious way to enjoy a keto-friendly breakfast with healthy fats and protein.
Ingredients:
2 avocados
4 eggs
4 slices of bacon
Salt and pepper to taste
Chopped fresh parsley (optional, for garnish)
Instructions:
Preheat your oven to 375°F (190°C).
Cut the avocados in half and remove the pits. Scoop out a bit of the flesh to create a larger cavity.
Wrap each avocado half with a slice of bacon, securing it with a toothpick.
Place the avocado halves in a baking dish.
Crack an egg into each avocado half.
Season with salt and pepper.
Bake for about 15-20 minutes or until the eggs are cooked to your liking.
Garnish with chopped parsley if desired and serve.
