INGREDIENTS : LEMON CURD
juice of 2 lemons
zest of 2 lemons
100 grams caster sugar ( 3.5 oz )
50 grams butter ( 1.7 oz )
2 beaten eggs
INSTRUCTIONS :
.in a bowl over a pot of simmering water add 50 grams butter
.once slightly melted add zest of 2 lemons, 100 grams caster sugar
.add juice of 2 lemons & mix well
.once butter has melted whisk in 2 beaten eggs
.gently whisk for 10 to 15 minutes until custard consistency
.sieve to remove lemon bits
.pour into a jar & leave to cool ( can store in fridge for 2 weeks )
INGREDIENTS : SCONES ( 12 )
500 grams plain flour ( 17.6 oz )
extra flour for dusting
80 grams sugar ( 2.8 oz )
100 grams cold butter ( 3.5 oz )
30 grams baking powder ( 1.05 oz )
200 ml buttermilk ( 6.76 fl oz )
2 tablespoons buttermilk ( 29.5 oz )
1/2 teaspoon salt ( 1.14 grams )
2 eggs
INSTRUCTIONS :
.in a large bowl add 500 grams plain flour, 30 grams baking powder
.whisk together
.grate 100 grams cold butter into bowl
.with your hand mix flour & butter together
.add 1/2 teaspoon salt, 80 grams sugar
.whisk together
.make a well & set aside
.in a jug add 200 ml buttermilk
.beat 2 eggs & add to buttermilk
.whisk together
.pour wet ingredients into bowl
.mix with wooden spoon until dough consistency
.sprinkle flour on a flat board & place dough on top
.sprinkle flour on dough & shape
.flour rolling pin & gently roll approximately 1 inch thick
.cut out circles with a circular cutter & place a baking tray ( dip cutter in flour )
.brush buttermilk on top of scones
.place in preheated oven 200 c / 392 f for 15 to 18 minutes
.leave to cool
