"Crispy Delights: Irresistible Air-Fried Lentil Tofu Bites for a Healthy Snack Attack!"

FINALLY the weekend (and a long one at that), and we’re back with another Spotlight Saturday! This time, we have these ridiculously tasty-looking air-fried lentil tofu bites...🙌

Crispy, moreish and made with only 2 ingredients, they’ll be your next favourite snack!

INGREDIENTS
135g Red Lentils
Boiling Water
1/2 Tsp Paprika
1/2 Tsp Chilli Powder
1/2 Tsp Cumin Powder
1/2 Tsp Garlic Powder
1/2 Tsp Salt
Olive Oil

METHOD
1. Add hot boiling kettle water to the red lentils and allow it to sit for 15 minutes. The rule of thumb is add a little extra water where it comes above the lentils
2. Transfer over to a food processor and allow it to blitz until it becomes a puree consistency
3. Transfer over to a pot on medium heat and add all the seasonings. Let simmer whilst constantly stirring (very important to keep stirring) - ideally we want all the water in this mixture to evaporate and leave the consistency really thick, almost a mouldable state
4. Transfer over to a square shaped greased Tupperware and let it sit for a few hours to overnight
5. Carefully turn the Tupperware over and slowly remove the lentil tofu and place on a cutting board
6. Cut into cubes and place in the AirFryer and airfry at 185°C for 15 minutes, turning over halfway
