Recipe in English:
Ingredients:
sugar 300 grams (1 1/2 cup sugar)
water 60 grams (1/4 cup water)
cream 240 grams (1 cup) at room temperature
Unsalted butter 14 grams 5 tbsp room temperature
salt 4 grams (1/4 tsp salt)
- Measure the ingredients before starting the process and keep them aside
- Always measure the ingredients precisely if you want to be a successful chef
- You can use the granulated sugar or caster sugar to make caramel
- Take a sauce pan and mix water and sugar, level them in the sauce pan
- Turn the stove on, Flame should be medium high
- No mixing from this point until further instructions
- FIRST STAGE: The sugar will start bubbling, don't stir just flip the pan if required
- If you want the caramel to be silky, shiny and drippy - don't mix at this point, let it melt on its own
- SECOND STAGE: Sugar will start changing color to golden color - don't stir, just flip the pan
- When the sugar gets amber golden in color its the right time to add cream, don't cook beyond this point or the sugar will get dark and caramel will taste burnt
- Turn off the stove
- Add cream, Mix vigorously
- Mix, Mix, Mix
- Add the butter
- Turn the stove on, flame should be medium low
- Mix in the butter vigorously
- cook for 2 minutes
- turn the stove off
- caramel is ready
- Let it cool down to room temperature
- If you want to use it instantly, transfer it to a bowl
- If you want to store it, then put it in an airtight container and refrigerate
- This caramel can be used as a drip on cakes, cheesecakes, ice creams, tarts and between layers of cakes. It can also be used to make caramel ganache, caramel latte, caramel cold coffee and caramel buttercream or to do layering in homemade desserts.

This caramel can be stored up to 2 months in fridge in an airtight container

- Sab se pehle cheeni pighle gee or bulbulay banay ge - yahan mixing nahin kerni
- uske baad cheeni apna rang badle gee - mixing nahin kerni sirf pan ko hila dain agar zaroorat pare
- jab cheeni ka rang golden hojaye to is lamhay main cream dalain ge, cream ko is se zada nahin pakan us se se cheeni kaali hojaye gee or caramel ka ziqa jala hua yaega
- choolha band kerden
- cream mix keren or tezi se mix keren
- ab makhan daalain
- choolha jalayen
- tezi se makhan ko mix keren
- 2 minute k baad choolha band kerden
- caramel tayyar hai

- Agar ap ko fori istemal kerni hai toh kisi bowl main daal lain
- Agar ap ko store kerna hai toh kisi air tight dabbay main dal ker fridge main rekhden
