How to make delectable Mini Margherita Pizzas

Delectable Mini Margherita Pizzas are great for Brunch, Parties or Appetizers. They make a delicious Lunch or Dinner with a tossed Salad on the side.

Mini Margherita Pizzas
Ingredients:
4 Sourdough English Muffins
8 fresh thick Mozzarella Slices
3-4 Roma Tomatoes (16 Slices)
8 oz Tomato Sauce
24 sm Basil Leaves
(Or 10 lrg. Leaves chiffonaded)
1 large Garlic Clove, cut in half
Black Pepper

Line Baking Sheet with Parchment Paper.
Preheat Oven 450° F.
Cut Muffins in half, lightly toast.
Rub each Slice of bread with Garlic.
Top with a large Spoon full of Tomato Sauce, 1 Mozzarella Slice, 2 Tomato Slices and season with Pepper.
Place all Mini Pizzas on prepared Baking Sheet.
Bake until Cheese is melted.
Top each Mini Margherita Pizza with 3 small Basil Leaves (or sprinkle with chiffonade Basil)
