How to Cook Redfish (September 11th Edition)

Hello and welcome back to MK UltrEATS! On this episode I am going to teach you how to butcher and cook a Redfish (the right way). I am going to walk you through gutting the fish all the way to cooking it.

To accompany the fish, we are going to make a classic risotto and bacon braised kale salad.

Redfish ingredients
1- 5lb whole redfish
2 lemons
Kitchen Sheers
Sharp Chef's Knife

Risotto
1.5 cups arborio rice
3 cups chicken stock
1/2 diced onion
2 cloves minced garlic
1/4 cup heavy cream
1 cup grated parmesan

Bacon Braised Kale

6 slices of bacon
2 ears of corn cut off the cobb
2 cups of grape tomatoes sliced in half
1/2 sliced red onion
1 cup Asadero Cheese
1 bunch of chopped cilantro
1/2 cup Malt Vinegar
2 lemons juiced
1/4 cup olive oil
