Ingredients:

2 slices of whole-grain bread
1 ripe avocado
2 large eggs
Salt and pepper to taste
Red pepper flakes (optional, for some heat)
Olive oil or cooking spray for poaching eggs
Fresh herbs (such as cilantro or parsley) for garnish (optional)
Instructions:

Toast the Bread:

Place the slices of whole-grain bread in a toaster or on a stovetop griddle and toast them until they are golden brown.
Prepare the Avocado:

While the bread is toasting, cut the ripe avocado in half, remove the pit, and scoop out the flesh into a bowl.
Mash the avocado with a fork until it's smooth and creamy.
Season the mashed avocado with a pinch of salt and pepper. You can also add a dash of red pepper flakes for some extra flavor if you like it spicy.
Poach the Eggs:

Fill a medium-sized saucepan with water until it's about two-thirds full.
Place the saucepan on the stove and bring the water to a gentle simmer over medium heat. You should see small bubbles forming at the bottom of the pan.
Crack one egg into a small bowl or ramekin.
Gently swirl the simmering water with a spoon to create a vortex.
Carefully slide the egg into the center of the swirling water.
