This is a wonderful Recipe for a moist Blueberry Upside Down Cake. Great Dessert that you could enhance with a dusting of Powdered Sugar or a cloud of whipped Cream.

Blueberry Upside Down Cake
Ingredients:
1-3/4 cups Flour
1 cup + 1-1/2 tbsp Sugar
1/2 cup Brown Sugar
1/2 cup Butter, softened
2 Eggs
1 tsp Baking Powder
3/4 cup Milk
1 tbsp Cornstarch
1/2 tsp Salt
1 Lemon Zest & Juice

9" Springform
Baking Spray

Line Springform with Parchment Paper, coat with Baking Spray.
Preheat Oven 350° F
Combine Flour, Salt, Baking Powder & Cornstarch, whisk well and set aside.
Cream together Butter, Brown Sugar & Sugar.
Add one Egg at a time & Zest of one Lemon.
Incorporate half of Flour Mixture, Milk & rest of Flour, set aside.
Combine Blueberries, Sugar and 2 tbsp Lemon Juice, mix well.
Pour Blueberries in prepared Springform, spread out evenly.
Top with Cake batter.
Bake 60- 65 Minutes or until tester comes out clean.
Cool Cake completely, remove Springform.
Flip Cake upside down onto serving platter.
Refrigerate for 1 hour before serving.
