Piri piri sauce

6-7 large red chilis
1 brown onion, cut into quarters
2 clove garlic
1 tsp smokey paprika
1 tsp dried oregano
1 roast red capsicum (pepper)
Salt, pepper
1/3 cup extra virgin olive oil
2 tbsp red wine vinegar

1 whole free-range chicken, split in half
1 bag @potato_utopia Rustic Skin On Fries
Handful coriander leaves
Lemon to serve

Method

Preheat a grill plate

Cook the chilis and onions to char them up then transfer to a blender with the remaining piri piri ingredients and blend to a smooth sauce.

Preheat an oven to 220C.

Place the chicken onto a baking tray, season with salt, pepper and marinate with 1/3 of the piri pir sauce and drizzle with a little olive oil.

Roast in the oven for approx. 30 minutes, basting throughout with a little more sauce and any juice form the tray. You want it nice and carnalised

Add the Rustic fries to another tray and bake for 20 minutes until crisp.

Serve the chicken with any juice from the tray, the fries, extra piri piri sauce, coriander and lemon wedges.
