It's day 28 of the #EveryBitCountsChallenge and today you're in for a real treat! If your zucchini plants are doing well, then you probably have more zucchini than you even k now what to do with! Kristy is going to show you an extremely simple way to make your own zucchini flour, and talk about how to substitute it into your baking recipes. (hint: it's not a simple 1:1 replacement, so stay tuned!) She will walk you through the process, discuss whether or not to peel your zucchini before you start, and also how to make good use of your new flour. This is a great way cut back on white flour and add extra vitamins and nutrients while mixing up what you do with your fresh zucchini.
