Chicken Kastoori Bot Recipe: A Fusion Delight
Chicken Kastoori Bot is a flavorful fusion dish that combines the aromatic spices of Indian cuisine with the smoky grilling technique of barbecue. This dish offers a unique blend of traditional and contemporary flavors, making it a perfect choice for those looking to savor the best of both worlds. Ingredients:
For Marination:
500g boneless chicken, cut into bite-sized pieces
1/2 cup yogurt
2 tablespoons ginger-garlic paste
1 tablespoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon cumin powder
1 teaspoon coriander powder
1 tablespoon kasuri methi (dried fenugreek leaves)
1 tablespoon lemon juice
Salt to taste
For Kastoori Bot:
Skewers (wooden or metal)
1 onion, cut into rings
1 bell pepper, cut into squares
Oil or cooking spray for grilling
Instructions:
1. Marination:
In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, kasuri methi, lemon juice, and salt. Mix well to create a smooth marinade.
Add the chicken pieces to the marinade, ensuring they are coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to penetrate the meat.
2. Preparing the Skewers:
While the chicken marinates, soak the wooden skewers in water for about 30 minutes. This prevents them from burning during grilling.
Once the skewers are soaked, thread the marinated chicken pieces onto the skewers, alternating with onion rings and bell pepper squares. This creates a colorful and delicious arrangement.
3. Grilling:
Preheat the grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly spread and have reached a white-hot temperature.
Brush the grill grates with a bit of oil or use a cooking spray to prevent sticking.
Place the assembled chicken skewers on the grill. Cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has a nice charred and smoky appearance.
4. Serving:
Carefully remove the Chicken Kastoori Bot skewers from the grill and place them on a serving platter.
Garnish with fresh cilantro leaves and a sprinkle of garam masala for an extra burst of flavor.
Serve the Chicken Kastoori Bot hot alongside mint chutney, naan bread, or steamed rice.
