How to Make Chimney Cakes (Kürtőskalács) - Hungarian Street Food Dessert

Take a twisted trip to Hungary with this recipe for Kürtős Kalács, an eye-catching chimney cake with a crispy golden exterior and tender interior. Follow along as we shape sweet yeasted dough around a tube, then bake until perfectly crisp. Finish with a blanket of sugar, cinnamon, and nuts for a dessert that will transport you. These iconic Hungarian treats are carved from coil-shaped dough that develops irresistible layers as it bakes. Ingredients:

700 g flour
30g fresh yeast/15 g dry yeast
300 ml warm milk
2 eggs+2 egg yolks
3 tbsp sugar
80 g melted butter
Vanilla extract
Pinch of salt

For decor:

Sugar
Mixed roasted nuts
Cinnamon sugar
Desiccated coconut

Preparation

In a bowl, add 2 tbsp sugar, add yeast, 100 ml warm milk, 5 tablespoons flour and mix
Cover for 10 minutes
In a bigger bowl, add remaining flour
In the middle, make a hole and add the yeast mix
Mix a little, then add the whisked eggs plus the two yolks, the remaining milk, sugar, vanilla and salt
Gradually add the butter, continuing to mix
The dough needs not to be sticky, and it needs to be elastic
Place in an oiled bowl and rise until doubles in olume
Transfer on floured surface and roll to 1 cm thickness
Cut in 3 cm wide strips
Swirl around heatproof tubes, covered in aluminum foil and butter
Brush the dough with water
Run each individually, through sugar, nuts , coconut
Place them in an oven tray and bake at 180 degrees Celsius for 25 minutes
Take them from the tubes after they have cooled down
Enjoy hot or cold

Tips

You can use any topping you like. You can use cinnamon for one, sugar for another, roasted nuts for another, or you can use all of the three toppings on one. It really depends on your taste.
For my tubes, I made them myself using Pringles tubes covered in aluminum foil, brushed with butter.
