For Yunnan people, sour is an indispensable taste in life and local food culture. We cook all edible sour fruits with different cooking methods. Papaya and Docynia delavayi are typical sour fruits. In stir-fry dishes, they enhance the taste; in soups, they make them less greasy; in cold dishes, they whet the appetite.... Their sour taste brings joy and excitement to our taste buds. As soon as I hear their names, my mouth waters!
