Mumbai cheese sandwich 🥪

Ingredients:
8 slices of bread (white or brown)
1 large potato, boiled and sliced
1 large tomato, thinly sliced
1 medium onion, thinly sliced
1/2 cucumber, thinly sliced
1/2 bell pepper (capsicum), thinly sliced
Butter or ghee, for toasting
Grated mozzarella cheese
Fresh coriander leaves, chopped (for garnish)
Chutneys:
Green chutney (made with mint, cilantro, green chilies, and lemon juice)
Tamarind chutney (sweet and tangy)
Chaat masala (for sprinkling)
Salt to taste
Instructions:
Prepare the Chutneys:
Make the green chutney by blending mint leaves, cilantro, green chilies, lemon juice, and a pinch of salt. Adjust the spiciness to your preference.
Prepare the tamarind chutney by mixing tamarind paste with water and a bit of sugar. Heat until it thickens, then strain to remove any seeds.
Assembling the Sandwich:
Lay out the bread slices and spread a layer of green chutney on one side of each slice.
On four of the bread slices, arrange the boiled potato slices, tomato slices, onion rings, cucumber slices, and bell pepper slices.
Sprinkle a pinch of chaat masala and salt over the veggies for extra flavor.
Layering the Cheese:
Generously sprinkle grated mozzarella cheese over the layered veggies on each slice.
Creating the Sandwiches:
Place the remaining four slices of bread on top of the cheese-covered slices to form sandwiches.
Toasting the Sandwiches:
Heat a griddle or pan and spread a little butter or ghee on it.
Carefully place the assembled sandwiches on the hot griddle and cook until the bread turns golden and the cheese starts melting. Press the sandwiches gently with a spatula to help the cheese melt evenly.
Once the bottom side is toasted, flip the sandwiches and toast the other side as well.
Serving:
Once the sandwiches are golden and crispy on both sides, remove them from the griddle.
Slice each sandwich diagonally into two triangles.
Serve the Mumbai Cheese Sandwiches hot, garnished with a drizzle of tamarind chutney and a sprinkle of chopped fresh coriander leaves.
