Why We Preserve Eggs in a Tortilla Shell

There are several ways to keep eggs fresh but this might be the tastiest. Homemade freezer burritos with bacon, eggs, and ham. We’re putting our eggs back now so we can eat them all winter long when the chickens stop laying eggs.

It is that wonderful time of the year when chicken egg production is in full swing and it seems like there’s no end in sight. However, with fall and winter approaching it won’t be long before egg laying stops when chickens enter their natural state of dormancy. Hens lay their eggs based on the amount of daylight they get each day; shorter days mean fewer eggs, but they pick back up in the spring when the days start getting longer. Some people like to supplement their chickens with artificial light in the winter but we prefer not to do that, and therefore in the winter we get fewer (or no) eggs for a period of time.

Since we’re getting upwards of 20 eggs per day right now, and there’s no way we can eat or sell all of them, what do we do? While we have frozen many eggs in food grade plastic dishes (which will be great for baking around Thanksgiving and Christmas) we wanted to try something new. While scrolling social media Megan came across people making freezer burritos so eggs could be enjoyed months later, so we decided to give it a try.

For us this is a great solution because 1) it is simple and 2) burritos are delicious! And they are easily customizable to various tastes. I like food spicy but Megan lives life on the mild side, and while she doesn’t like sausage I eat just about anything. She was able to make bacon, sausage, and ham/Canadian bacon burritos that we can enjoy throughout the winter and will make excellent grab-and-go breakfast items. Speaking of grab-and-go, I bet these would taste amazing in a deer stand…..
