Pumkin Soup With Espresso and Orange Juice Recipe

Ingredients:
1kg peeled pumkin in cubes
300gr potato peeled in cubes
200gr sweet potato peeled in cubes
1 medium white onion chopped
1 clove of garlic( add more if you like)
1 thumb of ginger finely chopped( I forgot to film it sadly)
100 gr butter
100ml milk cream
chicken or vegetable stock about 1 lit
salt
white pepper
olive oil
croutons and cream cheese for the end

Ιmplementation:
-Saute and give colour to your vegetables in a big pot with half the butter and some olive oil.
-Season with salt, white pepper
-Put the chicken stock (or vegetable stock) in the pot and stop about 1 finger of liquid after covering the vegetables.
-Boil in medium temperature without lid( TIP! You never put a lid on a veloute soup because you lose colour)
-After all the vegetables softened up remove some of the liquids and use a hand blender to make it smooth ( TIP! When makin a veloute soup its wise to keep some liquids on the side so you can control the outcome easier)
-Add a shot of espresso and juice from 1 orange
-TIP! Always taste before finish
-Serve with some croutons and cream cheese quenelle!
