The traditional Brazilian "Cow swamped"
This is a very traditional dish in Brazil, made in different ways and combinations of ingredients.
The traditional Vaca swamped (Cow swamped) is a delicious dinner with quality meat, I really like using Ribeye cap steak, which melts in your mouth it is so tender.
The broth together with the cassava forms a tasty and nutritious cream.

Ingredients:
• 1 kg of Ribeye Cap Steak
• salt to taste
• Black pepper to taste
• 3 cloves of garlic
• 1 big onion
• 3 tablespoons of tomato paste
• 3 pieces of chopped medium cassava
• 1 tablespoon wheat flour
• Chives
• Parsley
• 2 tablespoons olive oil
• water to cover
Method:
Cut the meat into cubes. Chop the onion, garlic, chives and parsley. And cut the cassava into small pieces.
In a pressure cooker, spread the olive oil and fry the meat until golden. Add the onion and garlic, stir well, add the cassava and pour water until everything is completely covered.
Add the rest of the ingredients, salt, pepper, chives and tomato paste. Cover the pan and cook for 20 minutes under pressure.
Turn off the heat, release the pressure and remove the lid from the pan.
In a container, dissolve a spoonful of wheat flour in cold water and pour it into the pan.
Turn the heat back on and cook for another 5 minutes.1 kg of Ribeye Cap Steak
