Ingredients:
• 1 kg pork loin
• 4 garlic cloves
• 1 teaspoon(s) black pepper
• 2 teaspoons of salt
• 2 tablespoon olive oil
• 30 ml water
• 200 ml of orange juice
• 80 g brown sugar
• 2 tablespoons vinegar
• 1 tablespoon thyme
• 1 pinch of cinnamon
• 1 pineapple
• 100 g grated mozzarella cheese
Method:
Crush or finely chop the garlic cloves. Place the garlic, pepper and salt in a bowl, add a little water and mix well.
Place the piece of meat in a bowl, spread the mixture made with the spices, rubbing it on all sides, cover with plastic wrap and leave in the fridge for at least 2 hours. You can leave it overnight.
In the pressure cooker, put the olive oil and sear the meat on all sides, add the orange juice, the brown sugar, the vinegar, the thyme and the pinch of cinnamon, mix and close the pan, cook for 20 minutes.
Open the pan, remove only the meat, take it to the cutting board and slice into slices.
Peel the pineapple, cut into slices.
Take a baking sheet and arrange it alternating a slice of meat, a slice of pineapple until the end, spread the grated mozzarella on top.
Bake for approximately 20 minutes. And serve with the sauce that formed in the pan, on top.
