Here's a simple recipe for Egg Appe:

Ingredients:

1 cup rice flour
1/2 cup urad dal flour
1/2 cup grated coconut
1 onion, finely chopped
1 green chili, finely chopped
1/4 cup chopped cilantro
1/2 tsp cumin seeds
Salt, to taste
2 eggs, beaten
Oil, for frying
Instructions:

In a large mixing bowl, combine the rice flour, urad dal flour, grated coconut, chopped onion, green chili, cilantro, cumin seeds, and salt.
Gradually add water to the mixture, stirring constantly, until a thick batter is formed.
Heat a paniyaram pan on medium heat and add a few drops of oil to each indentation.
Pour a spoonful of batter into each indentation, filling them up to about three-quarters full.
Spoon a small amount of beaten egg on top of each indentation.
Cook for about 2-3 minutes on one side until golden brown, then flip and cook the other side until golden brown as well.
Remove the Egg Appe from the pan and repeat until all the batter is used up.
Serve hot with chutney or sauce of your choice.
