Egg Poha | Popular Indian Breakfast Recipe

Poha is a popular breakfast recipe of Maharashtra, India. Generally beaten rice is cooked up with some of your favorite veggies, spiced up and seasoned to perfection..
Here in this recipe I added eggs to make it protein rich and more delicious that fulfills our much needed morning nutrition, flavored with curry leaves and at last serve with a dash of lime juice and crunchy sev/ snack mix. A good cuppa chai with it completes the morning breakfast. It is a easy, quick and healthy option for breakfast or brunch or as a snack.
Ingredients
Beaten Rice/ Flatten rice/ Poha/ Chire: 400 gm/ 2 cups
2-3 eggs
1 big onion, chopped
1 cup veggies (beans and carrots)
2 tbsp butter/ Oil
Salt to taste
1/2 cup peanuts
1/2 tsp turmeric powder
1 bunch coriander leaves, finely chopped
1/2 lime juice
Bhujia/ Snack mix
2 green chilies, chopped
