Cowboy Casserole (Starting with a Quart of Tomatoes)
1 1/2 pounds lean ground beef
2 ribs celery, diced
1/2 green pepper, diced
1 small onion, diced
2 tsp chili powder
1/2 cup black olives, sliced
3 1/2 cups cooked rice
1 quart home-canned tomatoes or 2 (14.5 oz) cans diced tomatoes
1 tsp salt
Black pepper
1 tsp Worcestershire sauce
Tabasco sauce to taste
Garnish with grated cheddar cheese, sliced black olives, and/or chopped green peppers.
Bake at 325 degrees for one hour.
