Pancakes are a quick basic solution for an inexpensive meal. Get creative with toppings and ingredients; you might never get tired of saving money by making pancakes with basic ingredients.

In this video, Sam and I demonstrate our pancake-making skills. A little accident meant that we talk about how to package store-bought pancake mix in Mylar bags to extend the shelf life. We show you how to make a pancake mix from scratch as well as how to make whole-grain pancakes using a sourdough start.

The Best Basic Homemade Pancake Mix

10 cups all-purpose flour
2 ½ cups instant nonfat dry milk
½ cup sugar
¼ cup baking powder
2 Tablespoons salt

Combine all ingredients – Store in an airtight container. Use within 6-8 months. Makes 13 cups.

To make pancakes:
• 1 ½ cups pancake mix
• 1 egg (slightly beaten)
• 1 cup water
• 3 tablespoon oil
Combine egg, water and oil then add to the pancake mix. Let stand for 5 minutes. Cook on hot oiled griddle for 3-4 minutes. Makes 10 to 12 4-inch pancakes.

1 egg
½ cup milk, juice, or liquid (may vary depending on consistency desired)
3 Tablespoon oil
1 cup natural yeast
½ teaspoon salt
½ teaspoon baking soda
1 cup flour
Mix egg, liquid, oil, and natural yeast. Mix flour, soda, and salt and combine with wet ingredients.
