Serves 6 people

Ingredients:

1 black tilapia fish
2 carrots
1 parsnip
1 onion
1 medium potato
1 tin of chopped tomatoes
2 tbsp rice
1 slice celeriac
3 pickled tomatoes + juice
Parsley
Dill
Dry lovage
All purpose seasoning
Ground black pepper
Salt

Preparation:

Cut all the vegetables whichever way you prefer
Dice the onion
Slice the fish
Fry the onion for 5 minutes, on low heat, then add the vegetables in, apart from the potato.
Fry for 5 minutes, then add the chopped tomatoes and water, to fill the pot half way through.
Boil for 10 minutes
Add the diced potato and the rice.
Add the pickled tomatoes and juice
Add the fish, including the head, when the vegetables and rice are almost boiled.
Sprinkle salt to taste and boil until the fish is cooked.
Do not over boil the fish, otherwise it will go all mushy.
At the end, add more salt if needed.
Add all purpose seasoning to taste, pepper, lovage, parsley and dill and boil for 5 minutes longer.

Tips:

You can add other type of fish instead. It tastes much better when you add more types of fish, but make sure you add fish which doesn’t have tiny bones, but larger.
