Pick some fresh spruce tips. Clean any dirt or debris off them. Place in a large bowl and crush up with your hands. You may also use your favorite kitchen gadget for this part. Then mix equal parts spruce tips and brown sugar well. In a clean 1 quart jar pack the mixture tightly. Every day or so pack as much more into the jar as you can leaving a small head space at the top. Stir daily as well. In a few days you will see a liquid starting to form in the jar. This is your syrup. check daily and stir. After 3-4 weeks strain out the spruce tips and put in a fresh jar and it is ready to eat or to flavor your favorite meal. This has a light citrus smell and taste. Enjoy.
