Day one vegetarian meals Mexican bean soup

2 tbsp. oil
1 onion, diced
4 garlic cloves, minced
1 1/2 tsp. cumin
1 tsp. oregano
1 tsp. salt
2 tsp. chili powder
¼ tsp. red pepper flakes optional
1 (11 oz.) can whole kernel corn, drained
2 (14.5 oz.) cans diced tomatoes, undrained
2 (15.5 oz.) cans black beans, drained
2 (15.5 oz.) cans kidney beans, drained
4 cups chicken broth

In a large soup pot, saute onion in oil until soft, then add the garlic and continue sauteing for a few more minutes.
Stir in the remaining ingredients and bring to a boil.
Reduce heat. Cover and simmer 10 to 15 minutes.
Serve topped with corn chips, sour cream and if desired, fresh cilantro.
