Add the zest of one lemon to the batter. Fill cupcake liners with lemon-infused batter. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Let them cool completely before frosting with a tangy lemon buttercream.
d. Red Velvet Indulgence:
Add 2 tablespoons of red food coloring to the batter. Fill cupcake liners with red velvet batter. Bake for 15-18 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Allow them to cool before topping with cream cheese frosting.
e. Nutty Caramel Crunch:
Stir in ½ cup of chopped nuts (such as walnuts or pecans) into the batter. Fill cupcake liners with the nutty batter. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Let them cool completely before frosting with a decadent caramel frosting and a sprinkle of chopped nuts.
