Delicious Chopped Chicken Liver W/Butter

About 8 servings (2 cups) 1/4 cup each.

Ingredients:

8 oz chicken livers
1 medium yellow onion (11/2cups finely chopped)
5 hard boiled eggs (finely chopped minced or mashed)
2 Tbsp unsalted butter (Yes, I used butter not Margarine)
Salt and pepper to taste
Sunflower oil to coat pan for cooking. Also 1 Tbsp sunflower oil can be added if you want the liver more smooth, spreadable, creamy and easier to get out of electric chopper.

Chop by hand or use an electric food chopper to chop just the liver or everything together to make it more like pâté.

Rinse and dry livers with paper towel. Cut away and discard any chunks of fat.

I keep this recipe up-to five days in refrigerator or one month in freezer. Covered with parchment paper touching and in plastic wrap or ziplock bag. Thaw in refrigerator overnight and mix well before serving cold.

I purchased a 1lb container of chicken livers. Half for this recipe and other half for my dog. Plain, fried chopped pieces for dog treats, stored in freezer. No onion for dog.
