A recipe for Batata Vada (Maharashtrian Potato Fritters):
Ingredients:
2 medium potatoes, boiled and mashed

1 tablespoon oil, for frying

Instructions:
In a bowl, combine the mashed potatoes, besan, turmeric powder, red chili powder, salt, and baking soda. Mix well.
Add enough water to make a thick batter. The batter should be thick enough to hold its shape when you form it into balls.
Heat the oil in a deep frying pan over medium heat.
Take a small amount of the batter and form it into a ball.
Gently drop the ball into the hot oil.
Fry the Vada in batches for 2-3 minutes per side, or until golden brown.
Remove the Vada from the oil and drain on paper towels.
Tips: To make the Vada more flavourful, you can add chopped onions, green chilies, or ginger to the batter.
If the batter is too thick, add a little more water. If the batter is too thin, add a little more besan.
Be careful not to overcrowd the pan when frying the Vada. This will lower the temperature of the oil and the Vada will not cook evenly.
