Cheese and Berry Danish Recipe

This Cheese and Berry Danish recipe is so easy to make. It is so delicious and they always disappear fast. It can be made in any flavor you like. I did strawberry, apricot, and blueberry jam. Use whatever filling sounds good to you!

Ingredients:

8 ounces cream cheese softened
4 tablespoons powdered sugar
⅛ teaspoon fine salt
1 teaspoon vanilla extract
1 17.3-ounce box frozen puff pastry sheets thawed
about 6 tablespoons berry jam
White sparkling sugar (optional)

For Egg Wash:
1 egg
1 tablespoon water

Instructions:

1. Preheat the oven to 375 degrees F. Line 2 baking pans with parchment paper.
2. Beat the cream cheese, powdered sugar and salt in a medium bowl with an electric mixer on medium-high speed. Scrape down the sides and bottom of the bowl as needed. Add the vanilla extract, beat until smooth. Transfer in a pastry bag. Set aside.
3. Lay out the 2 sheets of puff pastry, then cut each into 6 squares. Pipe the cheese filling onto the center of each dough square.
4. Create a slight well in the center of the cheese mixture and fill with 1-1 ½ teaspoons jam if desired.
5. Brush the tops of the pastry with the egg wash generously. Sprinkle the edge with sparkling sugar.
6. Using a knife or pizza cutter lightly score each rectangle about 1/4 inch in on all sides. This allows the edges to rise in order to contain the filling. Don’t cut all the way through, but just enough to leave behind a clear border.
7. Bake at 375 degrees Fahrenheit until pastry is puffed and edges are golden brown, about 15-20 minutes. Cool before serving.

To make egg wash, whisk egg and water together until smooth.  Use a pastry brush to lightly brush wash around outer edge of dough.
