Welcome back, Taco Connoisseurs! Today we embarked on a culinary adventure in the heart of Arizona, taking a bite out of Tacos Calafia, one of Gilbert's most talked-about taco joints.

Our lineup consisted of their much-raved carne asada, al pastor, and pollo asada, but we didn't stop there! We added an offbeat wildcard to our taco tussle, a nopales cactus taco. That's right, we've got spines in our stomachs, metaphorically speaking.

Before we got down to the taco business, we whetted our palates with three of Tacos Calafia's signature salsas - a tantalizing green, a mild red that tickled the taste buds, and a hot red that came in like a wildfire.
