Ingredients:

1 coconut :

Preparation
Remove liquid from coconut.
Crack the coconut and clean it up.
You only need the flesh.
Wash the flesh.
For the flakes, peel as much as you want from the flesh.
Transfer the flakes onto a kitchen paper towel and cover with a top sheet of paper.
Dry for a few days in a warm and dry place.
For the desiccated coconut, cut the flesh in pieces.
Blend in a blender until you reach the desired size for the final desiccated coconut.
Transfer on a paper towel, spread over the paper and cover with more paper.
Dry for a few days in a warm and dry place.
Store the dry coconut in a glass jar with lid, in a dry place.

Tips:

Use a potato peeler to shred the flakes from the flesh.
