Poha is a popular Indian dish made with flattened rice flakes. It is a quick and easy breakfast or snack option that is enjoyed across many regions in India. Poha is typically made by soaking flattened rice flakes in water for a few minutes to soften them, and then stir-frying them with various spices, vegetables, and sometimes peanuts.

Here's a basic recipe for making Poha:

Ingredients:

1 cup flattened rice (poha)
1 onion, finely chopped
1-2 green chilies, finely chopped (adjust according to your spice preference)
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
8-10 curry leaves
1/4 cup roasted peanuts
1/2 teaspoon turmeric powder
Salt to taste
Fresh coriander leaves for garnish
Lemon wedges (optional)
Instructions:

Rinse the flattened rice (poha) in a colander under running water for a few seconds. Allow it to drain and set it aside.

Heat oil in a pan or kadhai over medium heat. Add mustard seeds and cumin seeds. Once they start spluttering, add asafoetida, curry leaves, chopped green chilies, and chopped onion. Sauté until the onions turn translucent.

Add the roasted peanuts and stir for a minute. Then, add turmeric powder and salt. Mix well.

Add the rinsed flattened rice (poha) to the pan and gently mix everything together until the poha is coated with the spices. Be careful not to break the poha flakes while mixing.

Cook for a few minutes on low heat, stirring occasionally, until the poha is heated through.

Remove from heat and garnish with fresh coriander leaves.

Serve hot with a side of lemon wedges, if desired.

Note: You can also add other vegetables like peas, carrots, or potatoes to the poha for added flavor and nutrition. Additionally, some people like to sprinkle a little sugar on top of their poha for a touch of sweetness. Feel free to customize the recipe according to your preferences.
