Roasted Vegetable Medley with Garlic Wings
Ingredients:
* 4 chicken wings
* Salt, to taste
* 2 tablespoons olive oil
* 2 tomatoes, sliced
* 2 potatoes, cut into chunks
* 1 zucchini, sliced
* 1 bunch of asparagus, trimmed
* 4 cloves of garlic, minced
* 2 tablespoons olive oil
* Salt and pepper, to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Season the chicken wings with salt and drizzle them with olive oil. Place them on a baking sheet and set aside.
3. In a large mixing bowl, combine the sliced tomatoes, potato chunks, zucchini slices, trimmed asparagus, minced garlic, olive oil, salt, and pepper. Toss well to coat the vegetables evenly with the oil and seasonings.
4. Arrange the seasoned vegetables around the chicken wings on the baking sheet.
5. Place the baking sheet in the preheated oven and roast for about 30-35 minutes, or until the chicken wings are cooked through and the vegetables are tender, with a slightly charred appearance.
6. Once cooked, remove the baking sheet from the oven. Let the chicken wings and roasted vegetables rest for a few minutes before serving.
7. Serve the garlic wings alongside the roasted vegetable medley, and enjoy!
Note: Feel free to adjust the seasoning and cooking time according to your preference. You can also garnish the dish with fresh herbs, such as chopped parsley or basil, for an extra burst of flavor.
