Chaat Masala is a flavorful spice blend commonly used in Indian cuisine to enhance the taste of various street foods and snacks. It adds a tangy and savory flavor to dishes like chaats, fruit salads, and even beverages. Here's a basic recipe for making Chaat Masala:

Ingredients:

2 tablespoons cumin seeds
2 tablespoons coriander seeds
1 tablespoon dry mango powder (amchur)
1 tablespoon black salt (kala namak)
1 teaspoon black peppercorns
1 teaspoon dried ginger powder (soonth)
1/2 teaspoon ajwain seeds (carom seeds)
1/2 teaspoon fennel seeds (saunf)
1/2 teaspoon red chili powder (adjust to taste)
1/4 teaspoon asafoetida (hing)
Instructions:

Dry roast the cumin seeds and coriander seeds in a pan over medium heat until they turn aromatic and slightly browned. Stir continuously to prevent burning. Remove from heat and let them cool.

Once cooled, grind the roasted cumin and coriander seeds into a fine powder using a spice grinder or mortar and pestle.

In a mixing bowl, combine the ground cumin and coriander powder with all the remaining ingredients: dry mango powder, black salt, black peppercorns, dried ginger powder, ajwain seeds, fennel seeds, red chili powder, and asafoetida. Mix everything well to ensure all the spices are evenly distributed.

Transfer the mixture into an airtight jar or container and store it in a cool, dry place away from direct sunlight. The chaat masala will stay fresh for several months.

To use the chaat masala, sprinkle it on your favorite snacks like chaats, fruit salads, yogurt, or any other dish you want to add a tangy and savory flavor to. Adjust the amount according to your taste preferences.
