Here's a recipe for Special Chicken Paratha in Gujarat:
Ingredients:
For the dough:
2 cups whole wheat flour
1/2 tsp salt
Water, as needed
For the filling:
500g boneless chicken, chopped
1 onion, chopped
1 tomato, chopped
2 green chilies, chopped
1 tbsp ginger-garlic paste
1 tsp red chili powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
Salt, to taste
Oil, for cooking
Instructions:
In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead the dough until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
In a separate pan, heat oil over medium-high heat. Add the chopped onion and green chilies and sauté for 2-3 minutes.
Add the chopped tomato and ginger-garlic paste and cook until the tomato has softened.
Add the chopped chicken to the pan and cook for 5-7 minutes.
Add the red chili powder, coriander powder, cumin powder, garam masala powder, and salt to the chicken mixture. Mix well and cook for an additional 2-3 minutes.
Divide the dough into small balls and roll them out into thin circles. Spoon a generous amount of the chicken mixture onto one half of the circle.
Fold the other half of the circle over the chicken mixture to make a semi-circle.
Heat a tawa or griddle over medium-high heat. Place the paratha on the tawa and cook for 1-2 minutes on each side, or until the paratha is golden brown.
Repeat the process with the remaining dough and chicken mixture.
Serve the special chicken paratha hot with your favorite chutney or yogurt.
Note: You can adjust the amount of spices and green chilies to suit your taste preferences.
