3-4 large potatoes
2 cups of vegetable oil
Salt to taste

Peel the potatoes and thinly slice them using a mandolin or a sharp knife. Try to keep the thickness of the slices uniform.
Rinse the potato slices under cold running water to remove excess starch. This will help the chips become crispy.
Soak the potato slices in a bowl of cold water for 30 minutes to an hour. This will remove any remaining starch and prevent them from sticking together.
Drain the potato slices and pat them dry with a clean kitchen towel.
Heat the vegetable oil in a deep-frying pan over medium heat. You can also use a deep fryer if you have one.
Once the oil is hot, carefully add a handful of potato slices to the pan. Fry them until they turn golden brown and crispy, stirring occasionally to prevent them from sticking together.
