Instructions:

Cut the St. Peter fish into serving-sized pieces, and season with salt and pepper to taste.

In a shallow bowl, mix together the flour, paprika, garlic powder, onion powder, oregano, and thyme.

In another shallow bowl, whisk together the milk and eggs.

Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.

Dip each fish piece into the flour mixture, then into the egg mixture, and then back into the flour mixture.

Place the fish in the hot oil and fry until golden brown on both sides, about 4-5 minutes per side.

Once done, remove the fish from the oil and place them on a paper towel to drain any excess oil.

Serve hot with lemon wedges on the side.
