Baked Vegetable Sausage Skewers Recipe

We enjoy making Vegetable Sausage Skewers, they are a great Dinner Idea, easy to put together and baked in the Oven. Delicious served with Turmeric Rice and an Avocado Yogurt Sauce.

Baked Vegetable & Sausage Skewers
Ingredients:
6 Yellow Potatoes
1 Zucchini
2 Bell Peppers
1 lrg. Red Onion
1 Jalapeno Smoked Sausage
1 tbsp Italian Seasoning
1 tsp Paprika
2 tbsp EVO Oil

6 - 11" Skewers
Large Banking Sheet

Cut Potatoes in half.
Zucchini in 18 Pieces.
Bell Peppers in 18 Pieces.
Onion in large Petals.
Sausage in 24 Pieces.
Combine all cut Ingredients, season with Italian Seasoning & Paprika, coat with Oil.
Preheat Oven 400° F.
Line Baking Sheet with Parchment Paper.
Skewer Pieces by alternating between Potato, Sausage, Zucchini, Bell Pepper, Onion, Zucchini, Sausage, Bell Pepper, Onion, Sausage, Zucchini, Bell Pepper, Sausage, Onion & Potato for one Skewer.
Repeat and place Skewers equally apart on Baking Sheet.
Bake 20 Minutes.
Turn over Skewers and continue baking for 15-20 Minutes.
Enjoy!
