Egg Curry Recipe.

Here is a recipe for a delicious and flavorful egg curry:

Ingredients:

6 hard-boiled eggs, peeled and sliced in half
1 large onion, finely chopped
3-4 cloves of garlic, minced
1-inch piece of ginger, grated
2-3 medium-sized tomatoes, chopped
2 green chilies, chopped
1 tsp cumin seeds
1 tsp coriander powder
1 tsp turmeric powder
1 tsp garam masala powder
Salt, to taste
2 tbsp oil
Chopped fresh coriander leaves, for garnish
Instructions:

Heat the oil in a large frying pan or kadhai over medium-high heat. Add the cumin seeds and let them splutter for a few seconds.

Add the chopped onions and fry until they turn golden brown.

Add the minced garlic and grated ginger, and fry for another minute.

Add the chopped tomatoes and green chilies. Cook until the tomatoes turn soft and mushy.

Add the coriander powder, turmeric powder, garam masala powder, and salt. Stir well and cook for 2-3 minutes.

Add 1 cup of water to the pan and bring the mixture to a boil.

Reduce the heat to medium and add the sliced hard-boiled eggs to the pan. Gently stir the eggs to coat them with the curry sauce.

Cover the pan with a lid and let the curry simmer for 10-12 minutes, stirring occasionally.

Once the curry has thickened to your desired consistency, remove the lid and garnish with chopped fresh coriander leaves.
