Ingredients:
1.5 lbs (700g) boneless, skinless chicken thighs, cut into bite-sized pieces
Homemade Thai green curry paste (recipe below)
1 Tbsp coconut oil
1 cup (240ml) 100% creamed coconut
1 cup (240ml) coconut milk, divided
1 cup (240ml) chicken broth
2 Tbsp fish sauce
1 Tbsp palm sugar or brown sugar
1 tsp mango powder
1 cup (100g) bamboo shoots, sliced
1 cup (100g) green beans, trimmed and halved
1/2 cup (25g) Thai basil leaves
2 fresh kaffir lime leaves, torn (or zest of 2 limes)
Steamed jasmine rice, for serving

Homemade Thai Green Curry Paste:
2 stalks fresh lemongrass, thinly sliced
4 green Thai bird's eye chilies, chopped
1 small shallot, chopped
3 cloves garlic, chopped
1 tsp chopped fresh galangal
1 tsp chopped fresh cilantro roots or stems
1 tsp shrimp paste
1/2 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp white peppercorns
Juice of 1 lime

Instructions:
To make the homemade Thai green curry paste, use a mortar and pestle to pound together the lemongrass, chilies, shallot, garlic, galangal, cilantro roots or stems, shrimp paste, ground coriander, ground cumin, white peppercorns, and lime juice until a smooth paste is formed. Alternatively, you can use a food processor or blender to achieve the same result.

To marinate the chicken, combine 1/2 cup of coconut milk, the zest of 2 limes, and the juice of 1 lime in a large zip-top freezer bag. Add the chicken pieces, seal the bag, and massage to ensure the chicken is well-coated. Let marinate for at least 10 minutes.

Heat the coconut oil in a large skillet or wok over medium heat. Add the homemade Thai green curry paste and sauté for 2-3 minutes until fragrant.

Stir in the creamed coconut, the remaining 1/2 cup of coconut milk, and the chicken broth, mixing well until smooth. Bring the mixture to a gentle boil, then reduce the heat to low.

Remove the chicken from the marinade and add it to the skillet or wok, stirring to coat the chicken with the curry sauce. Simmer for 10-12 minutes, or until the chicken is cooked through and tender.

While the chicken is cooking, in a small bowl, mix together fish sauce, palm sugar, and mango powder. Once the chicken is cooked, stir this mixture into the curry.

Add the bamboo shoots and green beans to the curry, cooking for an additional 4-5 minutes until the vegetables are tender.

Remove the curry from heat and stir in Thai basil leaves and torn kaffir lime leaves (or lime zest), allowing the flavors to meld together.
