How to make Easy Pork Mole (Instant Pot)

This is a great easy Pork Mole Recipe we make in the Instant Pot/Pressure Cooker, serving it with Rice and a Salad.

Easy Pork Mole (Instant Pot)
Ingredients:
3 lb Pork Shoulder (bite sized pieces)
1 Onion, chopped
5 Garlic Cloves, minced
1 tbsp Cumin, ground
1 tbsp Cinnamon, ground
1 tsp Pepper
1 tsp Salt
4 tbsp Coconut Oil, divided
32 oz Chicken Broth, divided
16,5 oz Mole Sauce
4,5 oz Abuelita Chocolate, optional

Combine Pork, Cumin, Cinnamon, Pepper and Salt, mix well.
Set Instant Pot to high Sauté, heat 2 tbsp of Oil.
Brown Pork Pieces in batches, adding more Oil when needed, set Meat aside
Sauté Onions a couple Minutes, add Garlic.
Sauté and scrape browned bits of bottom.
Return Pork and add 16 oz of Chicken Broth, stir & secure Lid
Set Instant Pot to 45 Minutes High Pressure Cook
Open after 15 Minutes natural release.
Set Instant Pot to low Sauté.
Add Mole Sauce, stir and simmer.
(Optional, if you like it sweeter add Chocolate.)
Integrate rest of Chicken Broth, warm through and serve.
