Ingredients:
10g Butter
200g caster sugar
250 1 cup Prime lemon juice
1 lemon zest
120 3/4 cup corn starch
1/4 teaspoon salt
3tbs Icing Sugar sugar, for dusting

Instructions:

Grease an 8x8 inch square baking dish with butter or cooking spray and set aside.

In a large saucepan, combine the sugar, water, lemon juice, and lemon zest. Cook over medium heat, stirring occasionally, until the sugar has dissolved.

In a separate bowl, whisk together the corn starch, cream of tartar, and salt. Gradually add this mixture to the saucepan, whisking constantly to prevent lumps from forming.

Continue to cook the mixture over medium heat, stirring constantly, for about 15-20 minutes or until the mixture has thickened and becomes translucent.

Remove the pan from the heat and stir in the vanilla extract and food coloring (if using).

Pour the mixture into the greased baking dish and smooth the top with a spatula. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or until set.
