Chicken Chashu Recipe
Material:
6 pieces of skinned chicken thigh fillets
2 tbsp ginger water
2 tsp Japanese soy sauce
Mattress threads/mattress straps
4 tbsp cooking oil

Sauce:
600 ml of dashi
200 ml Japanese soy sauce
100 g of granulated sugar
50 g ginger, wash, slice with skin
3 spring onions, sliced 5 cm

How to make:
1. Marinate the chicken thigh fillets with ginger water and soy sauce, let stand for 15 minutes.
2. Cut the 20 cm long rope into 6 parts. Arrange 2 fillets on top of the string. Roll it up, then tie it with a rope. Start from the end of the new meat in the middle. set aside.
3. Heat oil in a flat pan. Sauté the chicken until it changes color on the outside. Lift. set aside.
4. Sauce: Add all the sauce ingredients, stir. Add chicken. Heat to a boil. Lower the heat, cook until the sauce is reduced. Lift.
5. Transfer the chicken and sauce to a closed container. Store in refrigerator overnight.
6. Finishing: Remove the chicken from the sauce, untie the strings. Thinly sliced. Grill with a blow torch or bake on a flat griddle. Serve it for ramen or donburi
