Maple Honey Granola

Ingredients:
3 cups rolled oats
1/4 cup brown sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/3 cup coconut oil
1/3 cup honey (or 1/2 maple syrup, 1/2 honey)
4 teaspoons vanilla extract

Directions:
Preheat oven to 300 degrees.

Line a large baking sheet with parchment paper, set aside.

Combine the oats, brown sugar, salt, and cinnamon in a medium bowl, set aside.

Add the coconut oil and honey and/or maple syrup to a small saucepan.

Heat over low/medium heat until warmed and the oil has completely melted.

Remove from heat and add vanilla.

Pour the oil mixture over the oats and stir until oats are well coated.

Spread onto the prepared cookie sheet, making an even layer.

Bake for 30 minutes, gently stirring once halfway through.

Granola is done when golden brown.

Add in ideas:
Nuts (finely chopped), rice crispies, dried fruit, coconut, chocolate chips, and seeds. Nuts and seeds can be added to the oat mixture before cooking. Add the coconut during the last few minutes of baking, just to toast it (watch it carefully, it can burn quickly). Add the dried fruit and chocolate chips after the granola has cooled.

Enjoy!
