*Its an ancient grain found in archaeological dig sites. (Guessed to be 12,000 years Old) a little skeptical that it’s quite that old since I don’t fully know how old the earth is.

*higher protein content but lower carbohydrates than modern wheat

*3-4x the beta carotene, twice the Vitamin A and 4x the antioxidants lutein ( commonly referred to as the Eye vitamin since it’s good for your eyes) and riboflavin (which is vitamin B2) than modern wheat

*only has 14 chromosomes as opposed to 42 in modern wheat. Some studies suggest this means the gluten structure is really different which makes it easier to digest and better for people with gluten sensitivity or allergies.

*great source of iron, dietary fiber, thiamine (which is vitamin B1 and helps the body to properly use carbohydrates. It’s also good to help maintain proper nerve function) and other b vitamins

*can reduce risk of eye disease (due to the antioxidants lutein as previously mentioned)

*while best to consume in moderation…it is easier on the digestive system and can help with weight loss due to the other health benefits some of which have already been mentioned.

*may delay the onset of type 2 diabetes some studies concluded that ancient wheat consumption decreased cell production relating to glucose and fat metabolism. Which in turn delays or prevents the development of type 2 diabetes.

*high in Phenolic acids…which have been shown to protect our bodies from some diseases.
