Here's another quick 30-minute meal you can make from left over mashed potatoes! It won't mess up a lot of dishes either. It's a win-win! I remember those days when you have kids going in all different directions for games and/or practices. Everybody's hungry and it is quicker to just go out to eat or pick something up on the way home. It gets old. Thaw some meat out the night before or when you leave for work in the morning and you'll be more prone to cook dinner. It's cheaper, healthier, and you can sit around the table and talk about each other's day. We need to be conversing more and leaving the cell phones in another room. Y'all go make you some dinner! :-)

Mashed Potato Casserole

1 lb ground beef, venison, or your favorite meat
Special Blend seasoning
1 (10.5 oz) can cream of mushroom or cream of chicken soup
Mashed potatoes
1 cup shredded cheddar cheese

Preheat oven to 350 degrees F. Brown meat & drain. Season with special blend seasoning. Spray a 7 x 11 casserole dish with non-stick cooking spray. Spread meat mixture in the bottom of the dish and cover with mashed potatoes. Top with cheese and bake for 20 minutes.
