Ingredients:

2 pounds of potatoes (russet or Yukon gold)
2 tablespoons of olive oil
1 teaspoon of salt
1/2 teaspoon of black pepper
1 teaspoon of garlic powder
1 teaspoon of dried rosemary
Instructions:

Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes. Cut them into bite-sized pieces.
In a large bowl, mix together the olive oil, salt, pepper, garlic powder, and dried rosemary.
Add the potato pieces to the bowl and toss them with the oil and spice mixture until they are evenly coated.
Arrange the potatoes in a single layer on a baking sheet.
Bake the potatoes for 30-35 minutes, stirring occasionally, until they are crispy and golden brown on the outside and tender on the inside.
Serve the potatoes hot, garnished with fresh herbs if desired.
