Homemade English Muffins! Nooks and Crannies

Make your Favorite English Muffins using the best ingredients. Even with The Nooks and Cranny's. Homemade is always better.
Recipe:
Starter:
1 cup of bread flour
1 cup of warm water
1 tsp of active dry yeast
1/2 tsp. of sugar
Mix well and cover for 24 hours in the fridge
Take out of fridge 2 hours before using to get to room temp.
Making the dough:
4 cups of bread flour
2 tbsp. of cold butter
3/4 cup of warm water
1/2 cup of whole milk
1 tsp of salt
1 packet of dried yeast or 2 1/4 tsp
work cold butter into flour using a pastry cutter
then add starter mix together
then add your milk and water and yeast
then add salt
mix for 5 minutes using dough hook
cover and let rise for 1 hour
roll out and use cookie cutter to form muffins
cover baking sheets with parchment and sprinkle with corn meal place muffins on the sheet and cover and rest for 20 minutes
use md-hot frying pan lightly spray with oil or if using cast iron do not spray
sprinkle the tops of the muffins with corn meal and place muffins in the hot pan lightly brown on each side. Return to baking sheet.
pre heat oven to 400 f
bake muffins for 10 minutes
when cooled off pierce the sides with a fork and store in freezer or Eat!
