Wonderful one pot vegan take on risotto using super healthy buckwheat. No fuss, and very quick meal full of flavour and nutrients. Great for dinner and lunch box.

What you will need:
~ 2 cups buckwheat grouts
~ One medium sweet potato
~ One large onion
~ 5 Large cremini mushrooms
~ 2 cups of water or vegetable stalk
~ Salt, pepper, dried tarragon and chilli flakes
