Ingredients:

1 cup fine sooji (semolina)
1/4 cup ghee (clarified butter)
1/2 cup powdered sugar
1/2 cup mixed dry fruits (chopped almonds, cashews, raisins, etc.)
1/4 tsp cardamom powder
Water, as needed
Oil, for frying
For the sugar syrup:

1 cup sugar
1/2 cup water
1/4 tsp cardamom powder
Instructions:

In a large mixing bowl, combine the sooji and ghee. Mix well until the mixture resembles coarse crumbs.

Add water gradually and knead into a smooth and pliable dough. Cover and let the dough rest for 10-15 minutes.

Meanwhile, prepare the sugar syrup. In a saucepan, combine sugar, water, and cardamom powder. Bring to a boil and let the syrup thicken a bit. Keep aside.

In another bowl, mix the powdered sugar, mixed dry fruits, and cardamom powder.

Divide the dough into small equal-sized balls.

Roll out each ball into a small disc, about 3 inches in diameter.

Place a teaspoon of the dry fruit filling in the center of the disc.

Fold the disc in half to make a semi-circle and pinch the edges together to seal.

You can make designs on the edges using a fork or your fingers.

Heat oil in a deep pan over medium heat.

Fry the gujhiyas in hot oil until golden brown and crispy.

Drain on a paper towel to remove excess oil.

Dip the fried gujhiyas in the sugar syrup and let them soak for a few minutes.

Serve warm or at room temperature.
